Cook's Corner: Cool your palate and plate with Tomato Aspic
All twelve of us took refuge from the hot morning sun in the kitchen, which was tiled in cool Mexican pavers. My friend was hosting this particular summer book club meeting in her home. The book? Kathryn Stocketts The Help.
The book club I belong to meets during the summer months only, as all the ladies are incredibly busy during the rest of the year. This is our sixth summer of reading together and book club is something I look forward to all year. We are an ambitious bunch, reading seven books over three months and meeting every three weeks to discuss them. And, of course, whenever we get together we bring food.
Since The Help is set in Mississippi in the 1960s, we decided to make it a Southern-inspired potluck. Several dishes were mentioned in the book: deviled eggs, fried okra, ham sandwiches, fried chicken and caramel cake. So it was natural that those would be included in our menu. There was also something mysterious that the author referred to as congealed salad. A little online sleuthing revealed it to be Jell-O salad.
While gelatin salads have been around since the 1840s, it wasnt until the 1920s that it became more widely distributed and available to the average American household. Early gelatin flavors included orange, lemon, strawberry and raspberry. Sales of the powdered gelatin mix still struggled, however, despite celebrity endorsements and distribution of free Jell-O cookbooks.
In the 1930s, the popularity of the gelatin salad, now re-named Jell-O, was sealed by a set of circumstances. Jell-O brand was now owned by General Foods Corporation, congealed salads suddenly became all the rage in American cuisine, the toe tapping J-E-L-L-O musical jingle was included in advertisements, and immensely popular comedian Jack Benny became the desserts spokesman. Gelatin salads were here to stay.
I am not old enough to remember Jack Benny as the spokesperson, but I did grow up seeing all the Jell-O commercials featuring another well-known comedian, Bill Cosby. Who could forget his Jell-O Jigglers commercials? I was happy to hear that he has recently returned as the Jell-O spokesperson.
